Instructions to make to make Khaman Dhokla

  1. Grease steamer pan with oil. Pour enough water in steamer and let it boil.
  2. In a bowl sieve besan. Add in rava, ginger & green chili paste, lemon juice, sugar, salt, hing, turmeric powder.
  3. Add beaten curd, water and beat well into smooth batter without lumps. (Adjust the amount of water depending on quality of flour, so add as required)
  4. Add in eno and stir in one direction to mix evenly with batter.
  5. Pour into greased pan and place it in steamer. Steam for 10-12 minutes on medium flame. Insert a toothpick and check if it comes out clean. If not steam for another 2-3 minutes.
  6. Remove the pan from steamer and let it cool for 5 minutes. With a knife loosen the edges and invert the pan onto a plate.
  7. For tempering heat 2 tbsp oil in a pan. Add in mustard and sesame seeds. When it splutters, add in curry leaves, slit green chili, hing and sauté. Add water, sugar and let it boil.
  8. Pour the tempering over the Khaman Dhokla and cut it into small squares with knife. Sprinkle coriander leaves and grated coconut.
  9. Serve Khaman Dhokla with coriander chutney.
