  9. 1/4 teaspoon turmeric powder
  10. 1 pinch asafoetida

  12. 1 teaspoon oil
  13. 2 cup water
  14. 1 teaspoon eno fruit salt
  15. Locho chutney
  16. 1 cup coriander leaves
  17. 8-10 mint leaves
  18. 2 green chillies
  19. 1/2 inch ginger
  20. 1 teaspoon cumin seeds
  21. 1 tablespoon sugar
  22. 1 tablespoon lemon juice
  23. as per taste Salt
  24. 1/2 cup or 2 pieces khaman dhokla
  25. As per requirement Water to grind chutney
  26. Locho masala
  27. 1/2 teaspoon pepper powder
  28. 1/2 teaspoon roasted cumin powder
  29. as per taste Salt
  30. 1/2 teaspoon chat masala
  31. 1 teaspoon red chilli powder
  32. Garnish
  33. as required Locho masala
  34. 2 Chopped onion
  35. as needed Coriander leaves
  36. 1 teaspoon melted butter
  37. as needed Sev

Steps to make to make Surti locho

  1. Soak the chana dal and urad dal for 5-6 hours. Soak the poha for 10 minutes
  2. Grind all soaked items with sour curd and required quantity of water into a smooth batter like consistency.
  3. Measure and take 2 cups of batter in a mixing bowl. Then add green chilli paste, ginger paste, turmeric powder, asafoetida, salt and oil in batter. Mix everything well.
  4. Then add 2 cup water and make pouring consistency of batter.
  5. Preheat steamer with greased plate for 5 minutes.
  6. Just before steaming add the eno fruit salt and give it a stir.
  7. Spread thin layer of batter into preheated steamer plate. Sprinkle some pepper powder and red chilli powder on it.
  8. Cover and steam locho for 15-18 minutes on medium flame.
  9. Meanwhile in a grinding jar add coriander leaves, mint leaves, green chilli, ginger, Cumin seeds, sugar, lemon juice, salt and 2 pieces of khaman dhokla and grind everything.
    Locho chutney is ready
  10. Then, in a bowl add pepper powder, roasted cumin powder, salt, chat masala, red chili powder and mix everything well.
  11. After 15 minutes,with help of toothpick check out locho is properly cooked or not. If toothpick comes out clean then locho is properly steamed. After it is half steamed add in some coriander leaves and some cheese.
  12. Finally, scoop a ladle of steamed locho on a plate. Garnish it with locho masala, onion, coriander leaves, melted butter and sev on top.
  13. NOTE
    POHA GIVES FLUFFINESS TO BATTER
    BATTER AND WATER RATIO SHOULD BE EQUAL.
    SURTI LOCHO TASTE GREAT WHEN IT IS SERVED HOT.
